EVERHOT RECIPE - ROASTED TOMATOES WITH GOATS CHEESE & SPRING ONION BRUSCHETTA -
INSPIRED BY EVERHOT IN PILLAR BOX RED
This recipe is delicious and ready to eat in just 30 minutes. Suitable as a starter or a main course.
Leave the stalks on the vine tomatoes - they look great!
1 large bulb of garlic
500g small organic vine tomatoes OR
2 x 200g packs organic cherry tomatoes
2 tbsp sprigs of fresh thyme, plus
a little chopped for garnish
1 tbsp clear honey
2 tbsp balsamic vinegar
4 tbsp olive oil, plus
extra for brushing
2 x 100g packs Welsh organic goats cheese
1 bunch spring onions, trimmed and chopped
6-12 x 1cm slices white bread
Salt and freshly ground black pepper
Preheat your Everhot oven to 200°C.
Separate the garlic into cloves but, don't peel.
Place with the tomatoes in a baking dish just large enough to contain them and scatter over the Thyme.
Drizzle over the honey, vinegar and olive oil. Season and mix together.
Roast for 20-30 minutes or until the garlic is soft.
Mash the goats cheese and season. Work in 2/3 of the spring onions.
Brush the bread with a little olive oil and toast both sides then serve with the goats cheese, garlic and tomatoes.
Drizzle over the cooking juices, season and top with spring onions and chopped thyme.
