EVERHOT RECIPE - LEMON AND LAVENDER SHORTBREAD - INSPIRED BY EVERHOT IN TEAL
This shortbread is elegant, dainty and sophisticated and just melt in your mouth!
175g softened butter
100g caster sugar
225g plain flour
2 tbsp finely chopped lavender flowers
Zest of 1 lemon
Set your Everhot oven to 160C.
Beat the butter with sugar in a large mixing bowl.
Add the lavender, lemon zest and beat together, then stir in the flour.
With your hands, bring the mixture together until smooth.
Press the dough into a baking tray (lightly grease beforehand) and refrigerate for 1 hour.
Prick all over and bake for 40 minutes or until lightly golden.
Cut into fingers or squares and let to cool. (Cut when still hot, otherwise it will crumble when slicing)
